I have been hard at work this morning preparing for my New Years Eve feast. I had a great time making coconut chocolate mint ice-cream (see below). I have had a very rejuvenating holiday season with a much decreased work load and a great Christmas celebration with my family!
I have been reflecting on this past year and am feeling particularly blessed this holiday season, because my father's health is back to 100%. Last Christmas my dad was between very intensive chemotherapy treatments for lymphoma and needless to say was experiencing the very harmful effects of toxic chemicals. We made the best of Christmas last year and made sure we all put the best possible, health promoting foods in our bodies and positive thoughts in our minds! 1 year later my dad is cancer free and fit as a fiddle thanks to an integrated health care approach including medical treatments, naturopathic treatments, holistic nutrition strategies as well as healthy doses of exercise!
This New Years Eve I encourage everyone to be grateful for their health and family/loved ones. We never know what is going to happen in life or with our health and we always need to be aware of all the good things we have at this moment. Even if things don't seem perfect focus your attention on the things you do have, rather than the things you don't have. When you put your energy and attention on what you are grateful for it breathes positivity through every facet of your life and encourages more positivity to flow in.
