Nutrient Intensive Salad with Hard Boiled Egg


Anyone who knows me well, understands one simple fact about me. I'm really into cramming as many nutrients possible into my body. Whether it's foods or supplements, I like to have tons of antioxidants in my life. The salad I am presenting to you right now lives true to my need for a ton of nutrients. It is full of super veggies/fruits and topped with potent omega 3 oil. On top of its superior nutrient density, this salad tastes great. Below is my scientific diagram outlining how one creates such a salad.

What's so darn good about this salad?

If you're not a fan of hard boiled eggs, simply omit them from the ingredients list when making the salad.

Beets: Have such a large array of vitamins and minerals they're like a multivitamin found in food form. I like that a lot. They're rich in folate, which is a nutrient needed to help create new red blood cells. Beets are also great helpers to liver, enhancing detoxification processes.

Kale: Kale is king! It is an extremely nutrient dense leafy green. It is really high in beta carotene, great for eye and skin health. It also has high levels of vitamins C and K. Add in a dash of protein and fibre, you have a recipe for a very health supportive food.

Pumpkin Seeds: Pumpkin seeds are one of my fav foods. They are extremely good for male sexy time health. With high levels of zinc, pumpkin seeds can help inhibit testosterone from morphing into it's evil cousin, DHT. This process helps stop prostate enlargement, fights male pattern baldness and gives energy to the parts of a man that matter.

Red Grapefruit: The rich colour in red grapefruits comes from the carotenoid lycopene. Lycopene is strongly anticancer and exhibits excellent antioxidant properties. Grapefruit is also very high in vitamin C, which is the most used antioxidant in the body and needed to detoxify the liver. Pectin, a form of fibre is also found in grapefruit. This fibre helps the body to reduce cholesterol levels, making grapefruit a very heart healthy fruit as well!

Nutrient Intense Salad

Salad Ingredients:

  • 2 cups kale
  • 2 cups arugula
  • 5 small plums sliced
  • 1 red grapefruit sliced
  • 2 small beets diced
  • ¼ cup pumpkin seeds
  • 1 or 2 medium sized egg, hard boiled

Dressing Ingredients:

  • leftover juice from grapefruit
  • 1/8 cup extra virgin olive oil
  • 2 tbsp Barlean’s omega swirl Key lime

method of preparation:

Slice plums and grapefruit. Remove skin from grapefruit. Peel and dice beets. Mix chopped veggies and fruits with salad greens. Take leftover grapefruit peels and squeeze remaining juice over salad. stir in olive oil and omega 3 oil and garnish with pumpkin seeds.
Boil eggs, wait till cool, and add to salad.
Note *If you don’t have omega 3 oil simply substitute with olive oil.
